I first made this super simple noodle salad on a hot summer day when I was living in Germany. It is so tasty and has all the elements of a nutritious meal. I love salads, especially on a hot day where I cannot be bothered to cook anything too complicated.

Ingredients

2 nests wheat noodles or any other type of vegan noodle
1 hand full lettuce or baby spinach
½ cucumber in chunks
4 tbsp chickpeas from a can, drained
4 tbsp quinoa pre cooked
½ cup blueberries
½ cup fresh mango in chunks
1 tbsp balsamic vinegar

Instructions

  1. Cook the noodles according to instructions. Rinse with cold water and drain. Set aside.
  2. Arrange lettuce or spinach leaves onto a plate, add the noodles and top with cucumber, quinoa, chickpeas, berries and mango.
  3. Sprinkle with balsamic vinegar.
